Lemon-Orange Muffins

A really quick post about muffins…  These ones were amazing! Light, fluffy, and tender. I made them this past Thanksgiving and everyone loved them. They are very simple both in terms of preparation and taste. The hardest part is perhaps zesting the orange and lemons. There is not much going on in terms of fat either. You could even cut the oil down to 1 tablespoon and it would be fine.

Here is the recipe below… I skipped the candied zest part for ease of preparation, and anyway I’m not a big fan of that stuff. This is from Cooking Light Way to Bake, a book that has proved to be useful for making quick and healthy baked goods.

Give it a shot and let me know what you think 🙂  I really enjoyed eating these over Thanksgiving. I also made two sheets of Jello and served that as dessert with whipped cream. Did you know they came out with a new Mango flavored jello? It’s pretty awesome.

I’m having a super splendid Friday evening. It’s 7’o’clock in California and the sun is still shining. The patio door is open and there’s a light breeze moving into my slightly overheated house. I can see our neighbor’s apple tree and I’m hoping they reach full growth soon so I can snag a couple (shhhh).  I have the Across the Universe soundtrack playing in the background while browsing the Internet, and the smell of chocolate chip muffins is in the air. Tofu and Vegetable Stir-Fry with Noodles

There’s nothing I like better than a good noodle dish, and this one’s a winner! It didn’t come out of a recipe book, but is the result of (a profuse amount of) trial and error. You really have to practice a few times before you come up with a good product. I remember the first time I made a stir-fry, and how everyone was kind of quiet because they didn’t really have anything good to say. Tofu and Vegetable Stir-Fry

Kale: the vegetable that helps you detox.

Brown rice: lower glycemic index and higher in fiber than white rice.

Today’s meal is a lovely, healthy, and quick fix dinner that I make at least once a week. You really can’t go wrong with a stir-fry! I’m lucky enough to live in California and have access to fresh vegetables and fruits, and I take advantage of it. Every Sunday, I drive 20 minutes over to a nearby city, with the best-priced Farmers Market, to stock up on essentials for the week.  Broccoli, carrots, kale, lettuce, onions, herbs, potatoes, apples, oranges, kiwis- you name it, they have it!
