Friday night “fast food”

I’m always thinking of you bloggers and all the wonderful recipes, tips, and stories that you share with me and the world. And so I thought, even on Friday night when all I want to do is bum out in front of the TV, I would skip the drive-thru, cook up something special, and write a post. I have written a post about this dish before, so please reference this link if you want the recipe.

Once in a while, I like to treat myself to some fast food. For lunch today, I had a grilled chicken sandwich and fries from this cool looking place that opened up at the mall. It was gross. Chicken breast was god knows how old, bread was soggy and slathered with sauce. Well, it didn’t get me sick or anything but it was just low-quality food overall. What did I expect from a grill that’s an overpriced version of McDonalds? Next time, I’ll stick with a $1 McChicken- if it sucks, at least all I would have wasted is a buck.

So after that disappointing episode with fast food, I needed some home-cooked food tonight. I was feeling lazy though and wanted to just nuke something in the microwave. There was nothing in the freezer. I had a box of mac n cheese, but   the thought of eating it plain was just not appetizing. Then I remembered that I had set aside some broccoli earlier in the week, along with half an onion, to make green macaroni. Having those ingredients ready on hand, in ziploc bags in the fridge, made it so easy to whip up a quick meal.

Three main ingredients.

Chop the onions and broccoli, saute for 5 minutes in olive oil. Then plop it all into a blender. Add some milk to make it easier to blend, as well as to lend some creaminess to the dish.

It will look like this.

Add the blended green mixture to your mac n cheese (prepared from the box).

Mix it up. Add a 1/2 tsp of salt to punch up the flavor.

Ta-da!

Yum, serve it in a special bowl to up the fancy factor.

My Friday night as a lone wolf: movie and home-cooked food. 🙂

So there you have it, a quick and healthy meal made in about 15 minutes. And my tummy is happy. Now, back to the movie!
